Excellent pastrami – i.e., meat preserved in a specific way, pickled and smoked, has become a hit in the USA and then in almost every region of the globe. This delicacy is usually prepared from beef brisket because this type of meat has a rich flavour.
It also has appropriate amounts of fat and fascia. Naturally, this is not the only use of this part. The brisket consists of three different parts: the front and the middle are an excellent base for bullion and stock, and the rear part is a good choice for baking.
