This is top-grade meat, extracted during the organoleptic evaluation of the raw material, followed by cutting for the desired quality characteristics, the common denominator of which is a marbled texture. Marbled pattern – the secret to excellent beef!

The so-called “marble” occurs as a result of the proper distribution of fat particles in the muscle tissue, which is best seen on a cross-section of the muscle. From the perspective of the culinary arts, fat is a carrier of flavor, so its role during the preparation of popular beef dishes (such as steaks) is very important. Rich fatty overgrowth creates – as a result of the contrast with red meat – a characteristic marbled texture, responsible for the juiciness, tenderness and delicacy of the prepared dishes.
