What better choice than knuckle to make stuffed cabbage rolls? The so-called knuckle is obtained from the hindquarter, and it is a great cut for stuffed cabbage rolls.

It is also an excellent choice for roulades, meatballs or burgers. Due to its structure (thick muscle fibres), it prefers longer heat treatment. If fried correctly, it can also be used to make excellent steaks.
