Ingredients:
Veal meatballs:
800 g of ground veal,
2 eggs 1 cup of breadcrumbs,
1/2 cup grated Parmesan (optional),
2 cloves of garlic, chopped 1/2 onion,
finely chopped Salt and pepper to taste,
2 tablespoons of olive oil
Citrus-coconut sauce:
400 ml coconut milk
Juice and zest of 2 limes
Juice and zest of 1 orange
1-2 chili peppers, finely chopped
2 tablespoons of honey (optional)
Salt and pepper to taste
Steamed broccoli:
500 g broccoli
Salt and pepper to taste
1 tablespoon olive oil
Sweet potato puree:
1 kg of sweet potatoes
50 g butter 100 ml
coconut milk
Salt and pepper to taste
Preparation:
1️⃣ Meatballs: In a large bowl, combine the veal, eggs, breadcrumbs, Parmesan, garlic and onion. Season with salt and pepper and form small balls. Fry in hot olive oil until golden brown, set aside.
2️⃣ Sauce: In the same pot, pour coconut milk, add citrus juice and zest, chili and honey. Season with salt and pepper. Put the meatballs in the sauce and cook over low heat for 15-20 minutes.
3️⃣ Broccoli: Wash the broccoli and steam for 3-4 minutes. Season with salt, pepper and drizzle with olive oil.
4️⃣ Puree: Boil the sweet potatoes for 15-20 minutes, drain. Add butter and coconut milk and mix until smooth. Season with salt and pepper.
Pass: Place creamy puree, juicy meatballs in aromatic sauce and broccoli on a plate. Enjoy your meal!
